Bailey's Shortbread Cookies

If you like Bailey's, you will like these! I am not much of a drinker, but a little Bailey's Irish Cream in my coffee on a cold weekend morning is a nice treat. You definitely can taste the alcohol in these, especially in the icing. The longer they sit, the better the flavor.

Cookies:
3 1/2 cups flour
1/2 cup cornstarch
1 teaspoon salt
2 cups unsalted butter, softened
1 1/2 cups powdered sugar
2 tablespoons Bailey's

Mix flour through salt in a separate bowl. In a separate bowl, cream butter and sugar. Add Bailey's. Slowly add in the dry ingredients. Roll into tablespoon sized balls and flatten with a glass. Bake on parchment lined cookie sheets at 350 degrees for  about 12 minutes until lightly golden. Cool completely.

Icing:
1 cup powdered sugar
1 tablespoon of butter, softened
4 1/2 teaspoons of Bailey's

Mix powdered sugar and butter together, slowly add the Bailey's, stirring until smooth. Spread on cooled cookies. Allow the icing to set.


Hmmm..... I just realized I added 4 1/2 tablespoons of booze to the icing. I am sure I added more powdered sugar to make up for the added liquid. Oh, well. Use what works for you. They would be good either way.
